Today me and Thom decided to do a very tasty vegetarian soup from my grandmother’s recipe that’s perfect for cold winter days!
You need potatoes (you can choose whatever potatoes you prefer, but I used Sainsbury’s baby new potatoes – 2 bags of them!), a bunch of leek (I used 11 baby leeks), 4 small yellow cooking onions, 4 organic vegetable stock cubes, himalayan salt, a tub of single cream, broccoli and a man to peel the potatoes ;)
Boil it all together (apart from the broccoli which you boil in a separate pot) for about 25 minutes (or until the potatoes are soft).
When it’s all boiled and ready you blend it all together in a blender. Put in a bowl with some broccoli and eat!
